I really hope that you're just trolling...
First, they don't teach you to drive with two hands on the wheel just for the sake of doing it. If you have one hand on the wheel, it makes you less responsive, and since 50% of accidents are because of the other driver, that responsiveness counts.
Second, you could just put on the headset when you get in the car, or at the very least make it easily accessible.
