I've never eaten Tapioca (or Sago, as it's called here) that's been made like that.

Our Lemon Sago is a darker thing - not made with milk. It's water based, with treacle (I think), golden syrup, brown sugar and lemon juice + rind. Thats about it.

The tapioca is left to soak (in the water it's cooked in/with) prior to cooking.

When cool, it sets into a dark, but mostly clear jelly.
